The warm, intimate restaurant is the vision of Giorgio Borlenghi with design of Ermy Borlenghi Bonfield—the talent behind the design of the entire hotel. In keeping with the old-world Tuscan feel, the space is small and intimate with warm colors, flickering candlelight and antique paintings gracing the walls.

The name of the restaurant was inspired by, Camillo Benso, conte di Cavour, the former Prime Minister of the Kingdom of Piedmont-Sardinia. He worked in Torino under King Victor Emanuel II and is known for unifying Italy in 1861. Count Cavour became, in that year, the first Prime Minister of Italy.
